Discover Aviation Gin, a standout dry gin hailing from Oregon in the United States. This spirit captures the essence of innovation through its distinctive botanical profile, blending cardamom, coriander, French lavender, anise seed, sarsaparilla, juniper berries, and two varieties of orange peel. Each element contributes to a harmonious wave of flavors, setting it apart in the world of gins.

Crafted with precision, Aviation begins its journey in macerating tanks where these handpicked botanicals steep for eighteen hours in a neutral grain spirit. This infusion sets the stage for what follows: a distillation process using steam-heated jackets and a condenser to transform vapors into a refined distillate. Distillers exercise exacting control during the run, discarding the initial heads, capturing the vital heart, and halting at the tails after roughly seven hours. The resulting heart reaches 142 proof, a testament to the focus on quality.

From there, pure water integrates seamlessly in the blending tank, adjusting to a smooth 84 proof before heading to bottling. Filled, capped, labeled, and hand-packed, every bottle emerges ready for your collection. When poured, it clings to the glass with languid tears, promising depth. The aroma greets with bold spice leading into bright citrus zest, classic juniper, and delicate florals.

On the palate, expect a rich, enveloping warmth and viscosity. Sweet and spicy layers unfold midway, carrying through to a lingering, balanced close that's both sweet and spicy. Whether mixing into a classic gin and tonic, a martini, or exploring neat, Aviation delivers versatility and character. Ideal for those who appreciate a gin that tells a story of Oregon's craft spirit scene, this 750 ml bottle at 42% ABV offers exceptional value around $42.49.
